Mushroom Chili

I'm loving the snow, but hating the traffic it immediately brings on. We live in Minnesota and people still act surprised when it snows! This year is a bit different though, since it's been almost two years since the last big snow, so I guess I get why traffic would be worse than usual. I feel like I'm making small talk on a first date or something really Mackenzie, we are discussing the weather??

Moving on, yesterday I posted this picture revealing a mini preview of changes to come on the site! I can hardly wait for the big reveal! I'm adding functionality, switching over to WordPress, creating new segments, and updating the archives! I'm so excited!! Purr Design is where it's at y'all.

As for the recipe - I know what you're thinking - I just posted a chili recipe not more than a month ago. But! This is the one my MIL makes, and this is the one I crave when it's cold out. So, the last time she made it I asked for the recipe, brought it home and made a big ol' batch! I froze half of it and saved it for another day!

1 lb. ground beef
1/2 lb. ground pork
1 white onion, chopped
1 large green pepper, chopped
3 (15 oz.) cans stewed tomatoes
1 (8 oz.) can of tomato sauce
1 (15 oz.) can of chili beans
2 lb. button mushrooms, sliced
2 tablespoons chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic salt
4 fresh basil leaves, chopped
1 tablespoon sugar
1/2 teaspoon tobasco sauce
1/8 teaspoon marjoram
1 teaspoon oregano
2 bay leaves
Salt and pepper, to taste
  1. Chop your white onion and green pepper, set aside. In a large skillet, brown your ground beef and your ground pork. Add in the onion and green pepper and cook until the onions are translucent, about 5 minutes. Drain the grease from the skillet and place all of the ingredients into a crock pot.
  2. Pour in your remaining ingredients into the crock pot and simmer for about two hours on high.
  3. Serve with rolls for dipping - and garnish with your favorite toppings - green onions, cheese, sour cream, greek yogurt, etc.

Great idea. I love mushrooms but my hubs doesn't so more for me! ;)
