Bacon Fried Rice

This is a favorite at our house – when people ask what we’ve been eating lately, this is the recipe that gets requested most often. But, I’ve been tweaking it and refusing to give it up. So, for those of you who have asked – it’s finally ready!

I like this dish best when I remember to make the rice the day before and stick it in the fridge overnight. I’m not sure I have a rational reason for this other than it’s not as sticky. It’s good either way, and it never goes to waste.

Please just trust me and make it for dinner.

Bacon Fried Rice

Yield: 4-6 servings

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

1 cup carrots, minced
5 slices of bacon
2 teaspoons of fresh ginger, grated
3 cloves of garlic, minced
1 cup of peas
3 green onions
4 eggs
2 cup of jasmine rice
1/3 cup of soy sauce

Directions:

Cook your rice first and set it aside.

In a large skillet, fry your bacon until fully cooked and set aside. Drain out about half of the bacon grease. Add in the carrots, ginger, garlic and peas. Cook through. Move everything to the outside of the skillet and crack your eggs into the middle, scrambling them. Try not to over cook the eggs by turning your heat down to the lowest setting. Otherwise they will taste rubber-ish. Cut your bacon into bite size bits.

Add the remaining ingredients into the skillet and stir together. Once it's warmed through - serve it up!

Notes:

This dish isn't good for you. Take a moment to get over it and move on. You won't regret it.
