How to Make Fresh Pasta

There was a stage in my life where my parents referred to me as the “PQ” which stands for “Pasta Queen” without fail when they asked what I wanted to eat they knew their answer would be pasta. I never understood why they kept asking!? This past year for my birthday my MIL bought me a pasta maker! {jackpot!}

It took me a while to get around to it, but I finally made fresh egg pasta!

Clean a surface in your kitchen really well, and dump your flour out onto it. Then form a well in the middle and crack your eggs into it. Side note: if you’re smart, you will crack your eggs into a bowl and then pour them into the flour well. That way when you need to dig out pieces of cracked shell you don’t have to dig too far! :)

Then, using a fork break the yolks and start to combine the mixture together. I get it to the point where it’s not longer sticky and then I use my hands to knead it into a ball like so…

Then cut the ball into fourths…

Thread it through your pasta maker – I just have a hand crank one.

Fold it into thirds and thread it back through a few more times, until it comes out in sheets and is well combine.

Then thread it through the slotted side and you have linguine!

Fresh Pasta

Yield: 2-4 servings

Prep Time: 10 minutes

Cook Time: 2 minutes

Total Time: 30 minutes

Ingredients:

3/4 cup of flour
4 eggs

Directions:

Form a well with your flour and crack your eggs into it. Whisk the mixture together with a fork until well combine. Using your hands, knead the dough into a round, flat ball. Cut into fourths and feed each section through your pasta maker. Then fold the sections into thirds and feed them through a few more times until completely combine. Then feed through the slotted side of your pasta maker creating linguine!

Toss the fresh pasta into well salted boiling water for about 90 seconds or until it floats, then fish it out and serve with your favorite sauce.

Notes:

A bench scraper and a pasta maker are helpful, but not necessary for this!

    Fun! I’ve only made my own gnocchi before but never anything like linguine… going on the “must make” list right now!
